Stuffed Eggplant with Zesty Marinara

  • 4 each - Eggplant
  • 3/4 cup - Red Onions
  • 3/4 cup - Red Pepper
  • 3/4 cup - Cooked Spinach
  • 1-1/2 cup - Mozzarella Cheese
  • 3/4 cup - Artichoke Hearts

Cut eggplant the long way. Bake seed side down for 15-20 minutes or until soft. Let cool. Remove pulp from skin and chop (leaving skin whole). Sauté red onions, peppers, artichoke hearts and spinach with soft pepper garlic. Mix with eggplant and 1 cup Mozzarella. Re-stuff the eggplant and top with remaining Mozzarella and bake for another 10-15 minutes or until golden brown.

Zesty Marinara:
  • 2 cans - Cut Peeled Tomatoes
  • 1/2 cup - Red Onions Finely Chopped
  • 1 tablespoon - Oregano
  • 2 teaspoons - Thyme
  • 2 teaspoons - Basil
  • 1 teaspoon - Garlic
  • Pinch of Cayenne
  • Dash of Tabasco
  • Salt and Pepper to taste

Bring to a boil and let simmer for 15-20 minutes.
