Our Pastry Chef

Susan Lynn grew up in Laguna Beach, California, the youngest of three children. She attended U.C. Berkeley and spent her junior year studying at the University of Barcelona through the Education Abroad program.

In 1987, Susan enrolled at the California Culinary Academy in San Francisco. During cooking school, she worked at Rosalie's baking breads and desserts. After graduating from the CCA, Susan worked at Cocolat in Berkeley decorating cakes. Cocolat is known for its chocolate truffles. Susan then took a baking position at Kuleto's, an upscale Italian restaurant at the Hotel Florence in downtown San Francisco. She worked in the pastry department at Square One for three years under owner and chef Joyce Goldstein. Susan and her husband Maurice moved to the Portland area in 1991. She baked desserts at Zefiro in northwest Portland for two years.

Susan began making desserts for Marco's in 1994. She and Maurice have a sixteen year old daughter, Samantha, and a thirteen year old son, Nathaniel. Susan adores her children, her husband and their two cats, Zorro and Lou. She enjoys reading, the NY Times crossword and watching the Colbert Report.
